If possible, color your fondant a day or two ahead of time – so the colors will deepen. Additionally, letting the fondant sit, after you added all that color, will help restore some of its composition. And you will find it's not as goofy the next day. Knead your fondant well before you start to roll it or it will not roll evenly.

It depends on which fondant recipe you use, how dry or wet you make your fondant, whether you use CS, PS or Crisco to roll it out, how well you wrap it, the humidity in your area at that time of year, etc., etc., etc. But, in general, I'd avoid rolling them in CS or PS as that will leave the surface dry to begin with.

You can always color it ahead of time and keep it wrapped tight and out of the light. I keep mine in the fridge until I need it and take it out at least 2 hours before using so it's more pliable. I have made cut out shapes and kept them in the fridge and they do stay more pliable because they are in an air-tight container and no open to the air.
