Place the pieces of fondant that need to be hardened on a sheet pan that has been lined with parchment paper, and place this sheet pan into the cooling oven. Typically, small fondant pieces should remain in the oven for no more than ten minutes. Larger fondant pieces should remain in the oven for no more than fifteen minutes.

To apply simply mix a small amount of powder with Everclear, vodka, or alcohol-based flavoring and paint on with a brush. Use a smaller brush for more delicate work and a wider brush to cover larger areas. Sometimes it takes more than one coat to get the best coverage.

Air-drying fondant can take up to 36 hours, depending on thickness. Make your fondant 3-5 days before you plan on serving your cake to allow for adequate drying time. Set aside more drying time for homemade fondant. Homemade fondant takes several days to fully harden but can be solid enough to build on within 24 hours.
